Walnut Cake Recipe: Bakkali(باققالى)

Nuts and dry fruits are the most important ingredients in the Uyghur desserts and that’s because of the climate of the Uyghur region. In the summer the weather is so hot, 40-50 degrees, maybe even hotter than that and that makes the fruits so sugary!!

In this blogpost I’ll share with you very delicious, easy to make Walnut cake recipe!! I’m also gonna use raisins.
This sweet, nutty and yummy dessert is one of the main deserts whenever you have a festivals and parties!!

INGREDIENTS
For this recipe, I used a small bowl (it’s about one cup) to measure the sugar, oil, and white flour. If you have other, slightly bigger or smaller bowl/cup, it’s also okay, just keep the proportions of those ingredients as a half bowl of oil and one bowl of milk, flour, and sugar.

egg yolk 4x
baking powder 1 tsp
baking soda 1 tsp
walnut one hand, roughly cut them into corn/bone sized small pieces
raisin one hand, roughly cut them into smaller pieces (wash and dry them up before the cutting if it’s needed)

INSTRUCTIONS

  1. Add sugar, oil, mix. (I used my hand to mix them as my mom did it:) ) then the egg yolks, milk, baking soda, baking powder and flour, mix. (If you mix them with your hand as well, well done! :) Squeeze the mixture while you’re mixing, so you find some lumps in the mixture and grab them to make it smooth) Add the walnut and raisins. Mix.

  2. Preheat the oven at 180 degrees for 5-10 minutes. (I have a combi oven and I use Forced Air setting) Prepare the baking pan: place the baking paper on the bottom and/or brush the sides with oil/butter, so the batter doesn’t stick to the sides.

  3. Whisk all the ingredients for the last time, right before you place the batter in the baking pan.

  4. Bake it at 180 degrees for 45 minutes.

  5. Let it cool down, cut it into desired pieces and ENJOY!!
